Should these accrediting bodies for the healthcare industry be added to the resume beneath the certification?
(CAAHEP) Commission on Accreditation of Allied Health Education Programs
(ABHES) Accrediting Bureau of Health Education Schools
ANSWER: I certainly don't think it would be harmful to include the accrediting bodies. But I guess you need to ask yourself how relevant that information will be to the recruiter/employer.
You don't say what kind of certifications you have. Are those bodies the only ones that provide the certification? Or would the prospective employer want to know how you achieved your cert?

I'm not sure what those terms mean or what I should list on my resume in that category.
ANSWER: If you don't know what they mean, then they're probably not relevant. Accreditation refers to a credentialing process, usually for a university. Certifications are awarded following specialized training in something. For instance, my daughter achieved certification as a pastry chef after attending culinary school. Nurses get certified in starting intravenous lines, etc.
Does that help?
